Theresa Cho: Cheap, easy, fast and delicious

In high school, I had a friend who lived by herself and regularly ate cauliflower and ketchup…but we won’t go there.

One of my previous posts states that a good, delicious meal is one of my top-most life refreshers. With creativity, eating well doesn’t mean spending a fortune or your entire day preparing one meal! Based on what my friends and I normally have in our kitchens, here are some quick, easy, cheap, and (most importantly) yummy recipes you can happily sink your teeth into.

Mac & Cheese + Prego
Prepare Mac & Cheese as you normally would and add Prego! If you have left over meat from another meal, feel free to throw that in. This dish is really a blank slate for anything. Melting in left over cheeses also adds another layer of yum.

Top Ramen  + Mixed Frozen Veggies + Egg
If unthawed, warm your mixed frozen veggies first
  • Crush your top ramen into little pieces for a faster cooking time (I place my bag of Tap Ramen on a hard, flat surface, then land my fist onto the noodles while being careful not to burst the bag open)
  • Place your crushed Top Ramen into a bowl, and add ~1.5 cups of water
  • To the bowl add:
  • >>> the pre-packaged seasoning
  • >>> mixed veggies
  • >>> 1 egg
  • Cook in microwave on high for 5 minutes, add more time if necessary
All you have to worry about is watching for boiling over! Of course, make sure the egg is cooked well, too. Liquids (like drinks and soups) are a great way to feel full easily. This is another quick, easy, thrify and yummy way to tummy satisfaction!

Peanut Butter + Apples/Celery
Peanut butter and jelly is a staple for college students. In fact, I worked with a student on campus (let’s call him “Steve”) who ate left over tortillas and peanut butter for two days straight because it was all he had left in his kitchen—yes, breakfast, lunch, and dinner.

Fresh produce is cheaper and way healthier than processed foods. Preparing fresh produce is also super easy: Wash, slice, and eat! Next time you’re at the grocery store, pick up apples and celery to go with left over peanut butter. This combination is easy, cheap, fast, delicious, and healthy!
